Sweet Potatoes and Sausage Au GratinSweet Potatoes and Sausage Au Gratin

Yield: 6 - 1 cup servings

Ingredients:

  • 1 - 12 oz package port sausage
  • onions
  • 1 tsp dried thyme leaves
  • 3 medium sweet potatoes, peeled, thinly sliced
  • 1 cup shredded fresh Parmesan cheese
  • 1/2 cup apple juice or OJ

Directions:

  1. Preheat oven to 375° F.
  2. Grease 13"x9" baking dish
  3. Cook sausage and drain.
  4. Add onions and thyme.
  5. In baking dish, layer half of the sweet potatoes, sausage mixture and cheese.
  6. Repeat layer.
  7. Add juice.
  8. Sprinkle with cheese.
  9. Cover with foil.
  10. Bake 35-45 minutes until potatoes are tender.
