Sweet Potatoes and Sausage Au Gratin

Yield: 6 - 1 cup servings
Ingredients:
- 1 - 12 oz package port sausage
- onions
- 1 tsp dried thyme leaves
- 3 medium sweet potatoes, peeled, thinly sliced
- 1 cup shredded fresh Parmesan cheese
- 1/2 cup apple juice or OJ
Directions:
- Preheat oven to 375° F.
- Grease 13"x9" baking dish
- Cook sausage and drain.
- Add onions and thyme.
- In baking dish, layer half of the sweet potatoes, sausage mixture and cheese.
- Repeat layer.
- Add juice.
- Sprinkle with cheese.
- Cover with foil.
- Bake 35-45 minutes until potatoes are tender.
